Fermentation in microflora (or, as we call it, flora-based foods) can address the world’s nutrition needs – and our demand for animal products – without the significant environmental and climate impacts caused by animal agriculture. (Microflora refers both to the plants of a specific region, as well as microorganisms collectively. You’ll notice we use flora as a shorthand way to refer to the fungi, yeast, algae, bacteria and other organisms commonly used to produce ingredients via fermentation.)
